Eating small-pot rice noodles every morning is one of the happiest things for Yunnan people, Kunmingers in particular.
Rice noodles cooked in small pots are distinguished by the bowl-sized pot made of red copper. With copper's strong thermal conductivity, the small pot can maximize the tender taste of rice noodles and the freshness of side dishes. Here is the cooking steps.
First, fill half of the small copper pot with bone broth on the stove. Next, put into the pot soy sauce, fresh pork minced, sour pickles, leek, pea tip, bean sprouts, tofu skin and rice noodles in succession. Then, cook the ingredients with high heat. Finally, you will get a multi-layered taste, including soft minced meat, smooth rice noodles and crispy leeks.
